Our Story

Seventeen years ago, we bought a ten-acre olive ranch in the garden of Lindsay, California. The property is home to 300 majestic olive trees- all currently 145 years old and thriving like never before. These trees are both Manzanilla and Sevillano varieties. Our beloved Manzanillas are cold-pressed into Ava’s Acre Olive Oil, while our Sevillano produce the bold flavor needed for Bonfilio Reserve Olive Oil. 

The ten acres are perfectly situated to bathe in California sunlight to flourish each year. The property mimics Spain’s terroir, with its fertile soil soaking up just enough rain to quench our trees’ thirst. Along with the characteristics of the property, our ten acres have what we call the “Bonfilio Organic Stamp.” We use absolutely no pesticides, even ones who claim to be “organic.” We Hand prune the trees and pick the olives each year only buy hand. We believe in farming the way it used to be: Rain, Sun, Soil and family-owned.  

We purchased Adam’s Olive Ranch from a WWII veteran. It was easy to tell how much he loved the trees, property, and the product, so we kept the name to honor him as we continued his legacy. Keeping this ranch owned by a military family was important to us- the patriotism and love of American agriculture flows throughout the property and products.
